This is a throwback from a little while ago. Every now and then I discover posts that I forgot about half way through. It is a super simple and satisfying dish that can be made at a moments notice. With all the hustle and bustle of life, sometimes, simple is best. Here is a super quick recipe, and then the pictures are all the way below.

 

Ingredients (for three people)

Cooked and peeled prawns

Linguine or spaghetti

A few mushrooms.,I had button but any kind will do

1 onion, sliced

A handful of rocket per person (use fresh spinach or watercress as a substitute)

3 large tomatoes or 6 smaller ones

3 cloves of garlic

A teaspoon of ginger, grated

1 lime, juice only

2 Green chillis, chopped

Salt and pepper to taste

A small glug of olive oil

 

Method

Boil the pasta or warm up leftover pasta and plate up in swirls

Arrange the rocket or substitute leaves on top of the pasta swirls and set the plates aside

Now add the oil to a hot pan, followed by the onion, chilli, garlic and ginger

Add the mushrooms and allow to soften

Add the tomatoes and stir

Squeeze in the lime juice

Season with salt and black pepper to taste

Add the prawns and allow them to heat through gently.

Top each pasta and rocket swirl with the prawn sauce and then dig in and enjoy!

You can do this with chicken as well, or any leftover cooked meat you have in the fridge. Really great for hungry days when you’re not in the mood to make anything elaborate. I remember the day I made this, I was not in the mood for anything long. I plonked my plate on a tray, poured myself a glass of wine, and pigged out in front of the telly:) .
